This may be my most glamorous New Year's Eve yet. My friend, Molly, is getting married! (Adorably enough, her and her man got engaged last NYE.) I can't wait to see her in white tonight- she will be a stunning bride. Congratulations, Molly and Ben! Being married is the best. (Molly, if you are reading this…  I'm praying the snow won't get too crazy on us today.)

Merry (belated) Christmas

It's not too late to wish you a Merry Christmas, right?  Happy New Year is probably more appropriate at this point…  Truly though, we hope you had a joy-filled and blessed Christmas season with the ones you love, and that your 2013 is one with happy memories! Here's our Christmas card. We just had to do something wedding-themed for 2012 and luckily Minted had the perfect one. I was lazy kept things simple and only sent it to our relatives this year.

Light Shrimp Fettuccine Alfredo

One of my favorite things (among many) about being a newlywed is cooking with all our nice, new cookware!  (We both enjoy cooking, we both hate cleaning up after, and I especially love baking…) I can't say we have a gourmet dinner every night, but every once in a while I try to whip something special up. Last Friday night, before the Christmas traveling began for us, I tried a new recipe, Cooking Light's Shrimp Fettucine Alfredo.  It was easy to make, and both Rob and I loved it.
Cooking Light's Shrimp Fettuccine Alfredo
1 (9 oz.) package of refrigerated fettuccine
1 lb. peeled and deveined medium shrimp (I just used 1/2 lb.)
2 green onions, chopped
2 garlic cloves, minced
2 tsp. olive oil
1/2 c. (2 oz.) grated Parmigiano-Reggiano cheese (I substituted this for a more affordable block of cheese, BelGioioso Parmesan)
1/3 c. half-and-half
3 Tbs. (1 1/2 oz.) 1/3 less-fat cream cheese
1/4 tsp. freshly ground black pepper
2 tablespoons chopped fresh parsley 

Preparation:
1. Cook the pasta according to package directions, omitting salt and fat.  Drain pasta in a colander over a bowl, reserving 1/4 cup cooking liquid.  Combine shrimp, onions, and garlic in a small bowl.  Heat a large skillet over medium-high heat.  Add olive oil; swirl to coat.  Add shrimp mixture, and saute for 4 minutes or until shrimp are done.  Remove from pan; keep warm.
2. Reduce heat to medium.  Add reserved cooking liquid, Parmigiano-Reggiano, half-and-half, cream cheese, and pepper to pan.  Cook 2 minutes or until cheeses melt.  Combine pasta, cheese mixture, and shrimp mixture.  Sprinkle with parsley.

Fresh Start!

For a couple of years, I was a devoted blogger and loved posting on All Things Bright and Beautiful. Somehow between getting married (in July!!!) and starting another school year, I completely abandoned my blog. I can't tell you how many time these past five months, I have thought, "Oh, I should blog about that…"  But, I had fallen off the blogging wagon so hard, it seemed odd to start back up again. It wasn't until lately I have been itching to start blogging again, so folks, I think it's time for me to come out of hibernation!


Fortunately, I have convinced my husband, Rob, to start a new blog,  The Ginger and the Blonde, with me to chronicle our life together. (Don't mind the cheesy blog name, ha!)  I'm so excited Rob is on board, because he is a great writer, and is quite different from me in many ways, so we can keep the content of the blog diverse!  While I'll most likely be the prime blogger, Rob promises to post occasionally.  We will share with you our day-to-day life, and I'll be sure to post about teaching, cooking, fashion, our wedding, faith, etc.  Who knows what we'll come up with to share!  While things are still bright and beautiful, that blog is no longer, and I'm excited to let you get to know the ginger (Rob) and the blonde (me.)
